Yummy Cheesy Pesto Pizza
Last night I was in the mood for pesto. I had recently purchased a delicious jar of it at Costco and I wanted to use it! (Again.) So while browsing the grocery section at Target, my favorite place ever, I decided on pizza. Delicious pesto pizza. With really great cheese. Here is my simple recipe for a truly divine pizza.
Cheesy Pesto Pizza.
You will need:
1 Can of Pilsbury Pizza Dough
1/2 Cup Pesto
1/4 Cup Grated Gruyere Cheese
1/4 Cup Feta Cheese
10 (ish) Brie Cheese Medallions. (We bought a brie log and sliced them thin like pepperoni!)
1 Large Chicken Breast.
You will first want to grease a baking sheet. Lay the dough out to the desired shape and thickness. Bake for 5 minutes.
Bake/grill/broil your chicken breast. We broiled ours to save time. Cut into pieces.
Spread 1/2 cup of pesto evenly onto the pizza dough.
Sprinkle 1/8 cup (we grated right onto the pizza!) gruyere cheese over pesto. Do the same with 1/8 cup of feta cheese. Place brie all over.
Sprinkle,or if you're OCD like me, strategically place chicken on top of the pesto and cheeses.
I finished of by sprinkling the remaining gruyere and feta cheeses on the pizza.
Bake for 10 minutes and there you have it! Thank me later.

This one is for Tony...
My manager Tony is relatively new to the blogging world (even though his brother has a blog...). SO, when I was given a couple of In-N-Out gift cards from him he told me to take my baby, get her an animal style cheeseburger and put pictures of it on my blog. Well... this is what I got.
We made a trip to our local (even though we live in UTAH) In-N-Out. Got a couple of burgers. Some fries.
I must say, In-N-Out is not my favorite. I would generally pick McDonald's over this place, BUT the burgers aren't bad and any chance to skip out on french fries (cause theirs are like cardboard) is actually a blessing. Just ask my thighs.
ANYWAY, we sat down with our food and I had every intention of documenting the whole thing. Unfortunately once a child starts in on a messy burger, you have to be on them like white on rice. Keeping clothes relatively clean, keeping food off of the floor, keeping her hands inside OUR booth and out of the woman's hair sitting behind her... oy. I forgot to take any more pictures. Boo. Sorry, Tony, but thank you for the yummy meal!

Day 18.
Day 18 – Something you crave a lot.
I often crave one of my very favorite party dish/appetizer: Baked Brie Cheese smothered in Cranberries served with warm french bread or your favorite cracker.
It is so simple. Bake a wheel of brie (found at any grocery store in the fine cheese section) at 350 degrees for 30-40 minutes. Smother in your choice of cranberry sauce and slice open to enjoy gooey, fuity goodness!
I LOVE THIS. I try to keep it for special occassions only so that I don't get sick of it or gain a million pounds. Luckily, tomorrow is Thanksgiving and our family will be enjoying this treat. :)
Try it, you won't regret it.
